Battle At Bristol – Spinach Artichoke Dip

The big day is finally here! Derek and I met at Virginia Tech freshman year in Physics class, and we are die hard Hokies fans! We have been so excited for the Battle at Bristol since they announced it, and although we couldn’t make it to the game, we’re celebrating big anyway! Plus, sitting home on your couch in an oversized T-shirt is so much better than sitting in the nosebleed seats… am I right? Well that’s what I’m going to tell myself!

In honor of gameday, I’m sharing one of my favorite game day recipes! Spinach Artichoke dip is one of my absolute favorite tailgate foods because it’s quick and easy to make, and always a crowd pleaser. If you’re gearing up for the big game tonight, here is the recipe!

Spinach & Artichoke Dip Recipe

10 oz. spinach, chopped

8 oz. cream cheese, softened

3/4 cup mayonnaise

2 cups monterey jack cheese

1 package Knorr vegetable recipe mix

14 oz. artichoke hearts, drained and chopped

2 cloves garlic, finely chopped

Bake for 35 minutes at 350 degrees, or until dip is hot!

Personally, I think the more cheese you add the better – you can never have enough cheese! That’s definitely not the healthiest way to do it but believe me, your guests will love you!
